Ingredients
For 2 servings, 2 glasses.
- 2 cups frozen mango chunks
Use ripe mango pieces; let them stand at room temperature for 5 minutes if very hard.
- 1 cup plain whole-milk yogurt
Use unsweetened yogurt for the cleanest mango flavor.
- 0.5 cup whole milk
Add cold for a smooth, pourable lassi.
- 1 tbsp honey
Adds gentle sweetness; omit if the mango is exceptionally ripe and sweet.
- 1 tbsp fresh lime juice
Strain out seeds before measuring.
- 0.25 tsp ground cardamom
Use freshly ground cardamom when possible.
- 1 pinch kosher salt
A small amount sharpens the mango and keeps the lassi from tasting flat.
Instructions
- Place the frozen mango, yogurt, milk, honey, lime juice, cardamom, and kosher salt in a blender. Let the mango stand for about 5 minutes first if the pieces are rock-hard, which helps the blender process them evenly.
- Blend on high for 45 to 60 seconds, stopping once to scrape down the sides if needed, until the lassi is completely smooth and thick with no visible mango pieces.
- Check the consistency: it should pour slowly but easily. If it is too thick to pour, blend in 1 tablespoon additional milk at a time; if it is loose, blend in a few more frozen mango pieces.
- Pour into two chilled glasses. For the best flavor, let the lassi stand for 1 minute so the cardamom aroma opens while the drink remains cold.
- Serve immediately, with a light dusting of cardamom on top if desired.
